The Seventh Sun is not just a catchy name for the game, but it has to do specifically with the world's history. In this world, a Sun used in this sense is something like an Age. The start of a new time or era in time.

Associating Sun with Dawn and Dawn of a New Age, a Sun is a collection of Ages. For example, the first Sun consists of the Age of Mercy, the Age of Rending, the Age of Lost Spirits, and the Age of Chaos. A Sun in Xaltoria is much like our Millennium.
